Many of my friends are always surprised I cook at home almost everyday so they always ask me for easy and quick recipes for themselves. Last weekend one of them called me that her husband was away on a golf trip with his friends and because he is the food person in the house she needed a recipe that she could prepare easily.
So, I decided to share the recipe with you... The ingredients are:
- 8 oz of uncooked couscous; prepare according to directions from manufacturer
- 16 oz of cooked chick peas or canned ones; I prefer to buy the organic ones because they have less sodium and preservatives
- 16 oz of cooked lentils or canned just like the chick peas
- 3 cups of diced tomatoes or 3 big ones chopped
Cooked couscous
Chick peas
Lentils
Tomatoes
Cilantro
Lime
Finished salad
Enjoy and remember to eat your veggies today!

How do I avoid the chickpeas (I LOVE hummus, and HATE chickpeas...). Maybe white beans?
