I personally like the sweet delicacy made with egg whites, powdered sugar, almonds and vanilla essence {almond or any other is really good too!}. The cookie sandwich usually comes filled with a flavored buttercream or jam that gives tons of flavor to the it.
This video is from Laduree in Paris which is the place credited to have created them back in the 1930's. The video is delicious so please don't watch it sometime around 3pm when you are looking for that little sugary treat.

I saw a Laduree in London and about flipped out. It was closed but ever since then I have been craving these. Which is why I will not watch that video- too heartbreaking!

Such a darling video and I cannot think of more perfect background music than "Dance of the Sugar Plum Fairy! Maybe someday I'll be brave and attempt to make some of these delectable delights myself. :)
